Tasty Protein Rich Chocolate Chip Muffins: With Cottage Cheese!!!

For those who know me, I am always tinkering in the kitchen with some kind of baking experiment. I try and make healthier options of tasty treats…and this one was a great success!

With oats, cottage cheese, bananas (of course…have you met me?!), it’s packing a lot of great nutrients in a small package!

These bad boys will bake quickly and perfectly in my all time favourite kitchen must have- the Breville Smart Oven. When I say I am in love with this oven, I am not kidding. I bake EVERYTHING in there…I literally use my regular oven as storage for my pots and pans. 

These silicone muffin trays fit perfectly, and is super easy to clean! None of the caked on muffin stick…you know what I mean!!!! Amazon also has a ton of different non-stick toaster oven sized tray packages. So many options! 

Not only can you bake your every day items, you can also air fry and dehydrate food and fruit. Honestly you can do so much with this ovens 13 different settings…I can’t even begin to describe it’s capabilities. Plus it heats up quickly because of it’s size. WIN. 

Protein Rich Chocolate Chip Muffins

Packed with protein, these muffins are made with cottage cheese and oatmeal as their backbone. 

-Prep Time 10 mins, cook time 20 mins. Makes about 9 muffins. 

EQUIPMENT:

  • Mixing bowl
  • 4 cup measuring cup
  • spatula
  • muffin pan

INGREDIENTS:

  • 2 cups oatmeal (steel cut or quick- it doesn’t matter)
  • 1 tsp baking powder
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 M/L ripe banana
  • 1tbsn nutella (optional)
  • 1/3 cup semi sweet chocolate chips

INSTRUCTIONS:

  1. Preheat oven to 375*F
  2. Mix dry ingredients together in the mixing bowl: oats, baking powder, chocolate chips.
  3. Mash the banana with a fork until puree consistency
  4. Mix the wet ingredients in the 4 cup measuring cup: cottage cheese, banana, eggs, Nutella
  5. Add the wet ingredients to the dry ingredients and mix thoroughly. The cottage cheese will look a bit chunky in there, but don’t worry it doesn’t taste weird.
  6. Grease your muffin pan. You can use liners if you like, I usually don’t and just make sure I really grease the pan. 
  7. Fill the muffin cups
  8. Place in oven and bake for 20-25 min until the tops begin to get that nice golden brown colouring. 
  9. After removing them from the oven, let them cool a bit before you attempt to take them out of the pan. Since they are made of oats, they can be a bit crumble if you try to take them out too soon. I usually wait 10 minutes. 
  10. ENJOY! Try using blueberries, cranberries, basically anything and change it up!

I was really hesitant to use cottage cheese because it is so chunky, and I was worried it would have an overwhelming cheesy flavour with the sweetness of the chocolate chips….but it honestly did not at all! 

I was so surprised, even when you bite into a piece of the curd, it doesn’t taste like cottage cheese. It’s almost like it’s absorbed the flavour around it.
